Vegetarian Camp Cooking on the Grill

Meat-free camp meals: grilled veggies, halloumi, portobello burgers, and quesadillas.

Slot Grill at camp: Vegetarian Camp Cooking on the Grill

Vegetarian camp meals can be just as satisfying as meat-based ones. The grill brings out the sweetness in vegetables and adds smoky flavor.

Grilled vegetables

Zucchini, bell peppers, onions, corn, mushrooms and eggplant all grill well. Cut thick, brush with oil, season, and grill over medium heat.

Halloumi skewers

Halloumi holds its shape on the grill. Skewer cubes with vegetables and grill until golden.

Portobello burgers

Marinate portobello caps in olive oil, garlic and balsamic. Grill until tender and serve on buns with cheese.

Quesadillas

Fill tortillas with cheese, beans and grilled vegetables. Toast on a griddle or grate.

Clean grill matters

Vegetarians and vegans especially appreciate a clean grill, since a public grate is coated in strangers' meat drippings. Your own grill solves that.

Planning a meatless camp menu

Vegetarian camp cooking is easier than many people expect, because most produce travels well and does not carry the same spoilage risk as raw meat. Hearty vegetables like peppers, onions, zucchini, corn and potatoes last several days in a cooler. Cheese, eggs and tofu add protein.

Protein ideas that hold up at camp

A clean surface matters even more

When a campground grate has hosted years of other people's hot dogs and pork chops, there is no telling what is baked onto it. For vegetarian and vegan campers, that is more than a hygiene issue; it is the whole point. Bringing your own grill means your vegetables touch only clean, seasoned steel. A griddle plate adds even more control for delicate items like tofu and sliced mushrooms.

Marinades and sauces to make at home

Packing produce for a cooler

Wash and dry produce at home. Wrap leafy greens in a paper towel inside a bag. Keep tomatoes and avocados on top where they will not get crushed. Store mushrooms in a paper bag inside a container so they do not get slimy.

Troubleshooting vegetarian grilling

One-skillet vegetarian meals

Vegan camp cooking

Grilled pizza on the griddle

Use naan or flatbread. Top with sauce, cheese and grilled vegetables. Heat on the griddle and cover with foil to melt.

Grilled salads

Protein for active trips

Hiking and paddling burn lots of energy. Combine beans and rice, add cheese and eggs, and snack on nuts and seeds.

Cooking for mixed groups

Cook vegetarian items first on a clean grill or keep a dedicated griddle section for them. This avoids cross-contact with meat.

Troubleshooting

A three-day vegetarian camp menu

Day one - Lunch: hummus and veggie wraps made at home. - Dinner: grilled halloumi skewers with peppers and red onion, couscous made with hot water from the grill, and a cucumber salad.

Day two - Breakfast: griddle potatoes with peppers, onions and fried eggs. - Lunch: bean and cheese quesadillas crisped on the griddle. - Dinner: grilled portobello caps with garlic oil, corn on the cob and foil-pack sweet potatoes.

Day three - Breakfast: banana pancakes with peanut butter. - Lunch: leftover grilled vegetables tucked into pita with feta.

Tofu that actually works over coals

Tofu has a reputation for falling apart on a grill, but extra-firm tofu holds up well with a little prep.

  1. Press the block at home between towels under a heavy pan for half an hour.
  2. Slice into thick slabs, about three-quarters of an inch.
  3. Marinate in a bag with soy sauce, garlic, a little sugar and oil.
  4. Grill over medium heat on a well-oiled grate, or on the griddle, without moving it until it releases.
  5. Flip once, brush with more marinade, and serve when both sides are browned.

Building flavor without meat

Keeping vegetables fresh in the cooler

Hardy vegetables like carrots, cabbage, peppers, onions, potatoes and squash last the whole trip. Delicate greens and berries should be eaten in the first day or two. Keep produce in a separate bag above the ice so it doesn't get waterlogged.

Why a dedicated grill helps vegetarians

On a shared public grate, vegetables land on residue from whatever meat was cooked there before. Bringing your own clean, seasoned grill means the surface is yours, and if you share with meat-eaters, you can cook the vegetarian food first.

Easy vegetarian sides for any meal

These sides round out a meat-free meal or give vegetarians plenty of options at a mixed-group cookout.

Breakfast without bacon

Vegetarian camp breakfasts can be just as hearty. Try griddle potatoes with peppers and eggs, banana pancakes with peanut butter, breakfast tacos with black beans and salsa, or a skillet of sautéed mushrooms and spinach topped with feta and fried eggs. Warm tortillas on the grate and set out hot sauce, and nobody will miss the meat on a cool morning.
